Gluten Free Chocolate Chip Banana Cakes

In this video I filmed and produced, Chef Kurt von Kahle provides a recipe for delicious chocolate chip banana cakes which are also gluten free.

For this recipe mix together one stick of butter, 3/4 cup of sugar, one teaspoon of vanilla, two large eggs, and three ripe bananas.  In a separate bowl mix together 1 and a half cups of gluten free flour, 1/2 teaspoon of xanthan gum, 1/2 teaspoon of baking soda, 1/2 teaspoon of baking powder, and a 1/2 teaspoon of salt.  When your wet mixture is well mixed, add in the flour mixture and mix it well.  Once it’s a creamy consistency, add in 1 cup of chocolate chips.

Coat the inside of individual tins with butter and sugar (it’s healthy!) and add in the batter.

In your oven, use convection mode at 350 degrees.  Bake for 18-22 minutes.  Serve with caramel sauce, ice cream, or whipped cream.

It’s delicious.
